Butternut Squash Purée with a Kale salad and Chia Seed Dressing


A cold evening in September led to this dinner. I also had just gotten back from our local farmers market. I had purchased kale, butternut squash, honey that had been jarred that morning, farmers market pesto, sprouts, yellow cucumbers and now I just needed to put them all together. I decided to make butternut squash purée topped with some sour cream and pesto. The salad was made with steamed kale, sprouts, yellow cucumber and a chia seed dressing.

Chia Seed Dressing
¼ cup olive oil
2 tablespoons apple cider vinegar
1 teaspoon Dijon mustard
½ onion, diced
1 tablespoon chia seeds
Pinch sea salt
1 teaspoon honey

Hemp Granola with Yogurt, Honey, Berry Sauce and Fresh Fruit


I woke up one morning craving something healthy and so I whipped these puppies up pretty quickly. We already had some hemp granola but next time I am going to make my own. I used some blueberries, applesauce and cranberries to make a sauce for the end. A dollop of plain yoghurt with a teaspoon of raw honey on top and then pop on some fresh berries and fruit. This was a delicious breakfast and totally gluten free.

Twas a week before Christmas

On Monday, I decided to do some baking. I really wanted to make some gingerbread men for the simple reasons that they taste yummy and they make the house smell unreal. There's nothing like the smell of baking. I needed a gluten/dairy free recipe and thanks to Mama M.j she gave me her moms recipe which I adjusted to make GF/DF. After getting started on the gingerbread men, I also went ahead and made a Christmas cake, my first ever. Thanks to my uncle Tom for his recipe. I also adjusted this to make it GF/DF so that my girlfriend could enjoy it on Christmas day with the rest of us. Here are some pics from my day in the kitchen.

Soft Gluten Free Gingerbread Cookies
:
1 1/2 Cups dark molasses
1 Cup packed brown sugar
2/3 Cup of cold water
1/3 Cup of shortening
7 Cups of GF flour
2 Teaspoons GF baking soda
1 Teaspoon salt
1 Teaspoon ground allspice
2 Teaspoons ground ginger
1 Teaspoons cinnamon
1 Teaspoon ground cloves
