Tonight for dinner I made us some delicious Greek rice pilaf, a Greek salad and some homemade lemonade. The pilaf had onions, garlic, peas, spinach, lemon juice and brown rice with dill and mint. The salad had tomatoes, cucumbers, sprouts, organic bell pepper, mint, dill, red wine vinegar and olive oil. The lemonade was so easy, I plan to make it all summer with some fresh mint inside. I found my Greek salad recipe from Jamie Oliver and my Greek brown rice pilaf from Moosewood.
I left mine dairy free due to allergies in the family but it was still completely scrumptious.
