Ouefs en Cocette

One morning, I made some Oeufs en Cocette which I have never made before. I used a lot of veggies like celery, onion, garlic, tomatoes and fresh herbs (basil and thyme). The veggies cook in some olive oil and the egg whites until soft, once soft you pop them into the ramekins, I put the yolks on top with some fresh pepper and sea salt and into the oven they go for about 10-15mins depending how you like your eggs. After 15 mins, if you like balsamic vinegar, now is a good time to add a drop, serve hot. VoilĂ !!!
